Check out this fantastic recipe that Ralph made; It’s a twist on a surf & turf dish that is well known all over the world, called ‘Vitello Tonato’. Vitello means ‘veal’ and Tonato translates to ‘tuna’. This version Ralph came up with consists of two Big Green Egg cooking techniques: smoke roasting and searing.
